Ingredients
  

  • 1 lb Ground Turkey
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes 14.5 oz
  • 1 cup Pumpkin Puree
  • 1 can Kidney Beans drained and rinsed
  • 1 can Black Beans drained and rinsed
  • 2 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • to taste Salt
  • to taste Black Pepper
  • 1 tbsp Olive Oil

Instructions
 

  • In a skillet, heat olive oil over medium heat and cook the ground turkey until browned, about 5-7 minutes. Add the diced onion and garlic, and cook until softened.
  • Transfer the turkey mixture to the crockpot. Add the diced tomatoes, pumpkin puree, kidney beans, black beans, chili powder, cumin, salt, and black pepper.
  • Stir to combine and cover the crockpot. Cook on low for 6 hours, or on high for 3 hours.
  • Serve the chili with your favorite toppings, such as sour cream, shredded cheese, or chopped cilantro.

Notes

This pumpkin chili can be easily adjusted to your preferred spice level by adding more chili powder or a few dashes of hot sauce.
