Ingredients
  

Salad Base

  • 2 cups cucumbers thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp fresh dill chopped

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

Instructions
 

  • Slice cucumbers thinly and place them in a large mixing bowl.
  • Add halved cherry tomatoes, sliced red onion, crumbled feta, and chopped dill.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Chill for 10 minutes before serving for best flavor.

Notes

For extra flavor, add sliced avocado or substitute dill with fresh parsley.
