Ingredients
  

Main Salad

  • 2 large cucumbers thinly sliced
  • 2 cups cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 2 tbsp fresh parsley chopped

Dressing

  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground

Instructions
 

  • Prepare the cucumbers and tomatoes by slicing them evenly and placing them into a large mixing bowl.
  • Add thinly sliced red onions and chopped parsley to the bowl.
  • In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper until well combined.
  • Pour the dressing over the vegetables and toss gently to combine.
  • Chill for 15 minutes before serving for best flavor, or serve immediately if desired.

Notes

You can also add feta cheese or fresh dill for extra flavor.
