Instructions
Sauté onions and garlic in olive oil until fragrant.
Add carrots, potatoes, broth, and seasonings.
Simmer until vegetables are fully soft.
Remove bay leaf and carefully transfer to a blender.
Blend until smooth and creamy.
Stir in coconut milk or cashew cream, and warm through before serving.
Notes
For extra silkiness, blend in a handful of steamed cauliflower or soaked cashews.
