Ingredients
  

Soup Base

  • 4 cups vegetable broth
  • 3 cups carrots (chopped)
  • 1 cup potatoes (diced)
  • 1 cup onion (chopped)
  • 3 cloves garlic
  • 1 tbsp olive oil

Seasoning

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf

Creaminess (No Dairy)

  • 1 cup coconut milk (unsweetened) or cashew cream

Instructions
 

  • Sauté onions and garlic in olive oil until fragrant.
  • Add carrots, potatoes, broth, and seasonings.
  • Simmer until vegetables are fully soft.
  • Remove bay leaf and carefully transfer to a blender.
  • Blend until smooth and creamy.
  • Stir in coconut milk or cashew cream, and warm through before serving.

Notes

For extra silkiness, blend in a handful of steamed cauliflower or soaked cashews.
