Ingredients
  

  • 1 can Canned black beans drained and rinsed
  • 1 can Canned kidney beans drained and rinsed
  • 1 can Chickpeas drained and rinsed
  • 1 large Red bell pepper diced
  • 1 medium Cucumber diced
  • 1 cup Cherry tomatoes halved
  • 1/4 cup Red onion finely chopped
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Honey
  • 1 tsp Garlic powder
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • In a large mixing bowl, combine the black beans, kidney beans, chickpeas, diced red bell pepper, cucumber, halved cherry tomatoes, and finely chopped red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, garlic powder, salt, and black pepper to make the dressing.
  • Pour the dressing over the bean mixture and toss gently to combine. Make sure all ingredients are coated with the dressing.
  • Serve immediately or refrigerate for an hour to allow the flavors to meld. Enjoy!

Notes

This salad can be customized by adding your favorite herbs or spices. It’s also great with some fresh cilantro or parsley for extra freshness.
