Ingredients
  

  • 4 cups Mixed greens
  • 1 cup Butternut squash peeled and cubed
  • 1 large Apple thinly sliced
  • 1/4 cup Walnuts chopped
  • 1/4 cup Cranberries dried
  • 2 tbsp Maple syrup
  • 1 tbsp Olive oil
  • 1 tbsp Apple cider vinegar
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Toss cubed butternut squash with a tablespoon of olive oil, salt, and pepper. Roast for 20 minutes, or until tender and slightly caramelized.
  • In a small bowl, whisk together the maple syrup, apple cider vinegar, and a pinch of salt and pepper to create the dressing.
  • In a large salad bowl, combine mixed greens, roasted squash, sliced apples, walnuts, and dried cranberries. Drizzle with the maple dressing and toss gently to combine.
  • Serve immediately and enjoy the vibrant flavors of fall!
