Ingredients
  

  • 2 medium Cucumbers
  • 1/4 small Red onion
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Olive oil
  • 1 tsp Honey
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

  • Slice the cucumbers into thin rounds and place them in a large mixing bowl.
  • Thinly slice the red onion and add it to the cucumbers.
  • In a small bowl, whisk together apple cider vinegar, olive oil, honey, salt, and black pepper to make the dressing.
  • Pour the dressing over the cucumbers and onion, and toss gently to combine.
  • Serve immediately, or refrigerate for 10-15 minutes for a chilled salad. Enjoy!

Notes

If you like extra crunch, try adding some sunflower seeds or chopped nuts for added texture.
