Instructions
Slice the cucumbers into thin rounds and place them in a large mixing bowl.
Thinly slice the red onion and add it to the cucumbers.
In a small bowl, whisk together apple cider vinegar, olive oil, honey, salt, and black pepper to make the dressing.
Pour the dressing over the cucumbers and onion, and toss gently to combine.
Serve immediately, or refrigerate for 10-15 minutes for a chilled salad. Enjoy!
