Ingredients
  

  • 1 medium sweet potato peeled and cubed
  • 2 cups mixed greens such as spinach or arugula
  • 1 apple sliced
  • 1/4 cup pecans chopped
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey

Instructions
 

  • Preheat your oven to 400°F (200°C). Toss the cubed sweet potato with a little olive oil and spread it on a baking sheet. Roast for 20-25 minutes, or until tender.
  • While the sweet potato is roasting, prepare the dressing by whisking together apple cider vinegar, honey, and a tablespoon of olive oil.
  • In a large bowl, toss the mixed greens with the sliced apple, roasted sweet potato, and chopped pecans.
  • Drizzle the dressing over the salad and toss gently to coat. Serve immediately.

Notes

Feel free to swap the pecans with other nuts like walnuts or almonds, and you can add crumbled feta for extra flavor.
