Ingredients
  

  • 4 cups vegetable broth
  • 2 cups carrots diced
  • 2 cups potatoes diced
  • 1 cup celery diced
  • 1 cup green beans fresh or frozen
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Add all the ingredients (vegetable broth, carrots, potatoes, celery, green beans, garlic powder, thyme, salt, and pepper) into the Instant Pot.
  • Stir everything together to combine and make sure all the vegetables are submerged in the broth.
  • Close the lid, set the Instant Pot to the 'Soup' function, and cook on high pressure for 25 minutes.
  • After the cooking time is up, allow the pressure to release naturally for 10 minutes, then use the quick release to release the remaining pressure.
  • Once the soup is done, taste and adjust seasoning as needed before serving. Serve hot with a slice of crusty bread or crackers.
