Ingredients
  

Soup Ingredients

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 4 garlic cloves minced
  • 1.5 cups dry lentils rinsed
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Optional Add-Ins

  • 1 cup spinach fresh
  • 1 tbsp lemon juice

Instructions
 

  • Heat olive oil in a pot and sauté onion, carrots, and celery until softened.
  • Add garlic and cook until fragrant.
  • Stir in lentils, broth, cumin, paprika, turmeric, salt, and pepper.
  • Simmer for 25–30 minutes until lentils are tender.
  • Stir in spinach and lemon before serving.

Notes

Red, brown, or green lentils all work well in this recipe.
