Ingredients

  • 1 onion chopped
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 2 cups cooked turkey shredded or chopped
  • 5 cups turkey or chicken broth
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook until softened.
  • Add cooked turkey and broth to the pot.
  • Bring to a simmer and cook for 25–30 minutes.
  • Season to taste and serve hot.
