Equipment

  • Saucepan
  • Strainer
  • Jar or Bottle

Ingredients

  • 1 cup Dried elderberries
  • 4 cups Water
  • 2 inches Fresh ginger root
  • 2 Cinnamon sticks
  • 5-6 Cloves
  • 1 cup Raw honey

Instructions

  • In a saucepan, combine the dried elderberries, water, fresh ginger, cinnamon sticks, and cloves. Bring to a boil over medium heat.
  • Reduce the heat and simmer the mixture for 30-45 minutes, or until the liquid has reduced by about half.
  • Remove the saucepan from the heat and let the mixture cool for about 10 minutes.
  • Once cooled, strain the syrup through a fine mesh strainer or cheesecloth to remove the solids, pressing the berries to extract all of the liquid.
  • Stir in the raw honey until fully dissolved and combine well.
  • Store the elderberry syrup in an airtight jar or bottle in the refrigerator. The syrup will keep for about 3-4 weeks.

Notes

Take 1 tablespoon of elderberry syrup daily to support your immune system or 1-2 tablespoons every few hours when feeling under the weather. You can also use this syrup in teas, smoothies, or drizzle over pancakes or waffles.
