Instructions
In a large pot, heat olive oil over medium heat. Add chicken cubes and cook until browned on all sides. Remove from the pot and set aside.
Add the onion and garlic to the pot, cooking until soft and fragrant.
Pour in the chicken broth and bring to a simmer.
Add carrots, celery, and potatoes. Stir in salt and pepper, and let the soup simmer for 25 minutes or until vegetables are tender.
Return the chicken to the pot, and add frozen peas. Let the soup simmer for another 10 minutes.
Serve hot, garnished with fresh herbs if desired.
Notes
Feel free to customize this soup by adding your favorite vegetables or herbs. This recipe can also be made with beef or turkey instead of chicken.
