Peel and chop the garlic, ginger, horseradish, and hot peppers into small pieces. Wear gloves when handling the peppers to avoid irritation.
Add all of the chopped ingredients to a large mason jar. Pour in the apple cider vinegar, ensuring that the ingredients are fully submerged. If necessary, use a clean weight or small glass jar to press the ingredients down.
Add the honey and black peppercorns to the jar, stirring gently to combine. If desired, add a sprig of rosemary for extra flavor.
Seal the jar tightly and shake well. Store in a warm, dark place for 2-3 weeks, shaking the jar daily to mix the ingredients and release their beneficial compounds into the vinegar.
After 2-3 weeks, strain the mixture through a fine mesh strainer or cheesecloth into a clean jar. Discard the solids or compost them.
Store the fire cider in a cool, dark place or refrigerate. Consume 1-2 tablespoons daily to help boost your immune system, or use it as a salad dressing or in tea.
Notes
For an extra kick, feel free to adjust the quantity of hot peppers based on your desired spice level. Fire cider can be enjoyed straight or diluted with water.
