Instructions
In a large pot, sauté the diced onion until translucent.
Add the diced potatoes and vegetable broth. Bring to a boil and cook for 20 minutes, until the potatoes are fork-tender.
Using a blender or immersion blender, puree the soup until smooth.
Stir in the milk, shredded cheddar cheese, salt, and pepper. Simmer for an additional 5 minutes, until creamy.
Allow the soup to cool before storing it in airtight containers for freezing.
Notes
This soup can be frozen for up to 3 months. To reheat, simply thaw and heat on the stovetop or microwave.
