Ingredients
  

Salad Base

  • 2 cups shredded cabbage mix of green and purple
  • 1 cup carrots julienned
  • 1 cup cucumber thinly sliced
  • 1/2 cup red bell pepper thin strips
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup toasted peanuts crushed

Dressing

  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp fresh ginger grated
  • 1 clove garlic minced

Instructions
 

  • In a large mixing bowl, combine shredded cabbage, carrots, cucumber, and bell pepper.
  • In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until smooth.
  • Pour dressing over the vegetables and toss well to combine.
  • Top with fresh cilantro and crushed peanuts before serving.

Notes

You can add grilled chicken, shrimp, or tofu for extra protein.
