Ingredients
  

Salad Base

  • 2 cups mixed lettuce
  • 1 cucumber sliced
  • 1 carrot shredded
  • 6 cherry tomatoes halved
  • 2 tbsp nuts roasted almonds or walnuts

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Rinse and prepare all vegetables thoroughly.
  • In a large mixing bowl, combine lettuce, cucumber, carrots, and cherry tomatoes.
  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until emulsified.
  • Pour the dressing over the vegetables and toss gently to coat.
  • Top with roasted nuts and serve immediately for maximum crunch.
