Ingredients
  

Base

  • 4 cups mixed greens spinach, arugula, or lettuce
  • 1 cucumber sliced
  • 1 cup cherry tomatoes halved

Toppings

  • 1 avocado diced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp sunflower seeds

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp honey
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Wash and dry the mixed greens, then place them in a large salad bowl.
  • Slice the cucumber and halve the cherry tomatoes, then add them to the bowl.
  • Add diced avocado, crumbled feta cheese, and sunflower seeds on top.
  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
  • Pour the dressing over the salad and toss gently until well combined.
  • Serve immediately and enjoy fresh.

Notes

You can customize this salad by adding grilled chicken, quinoa, or roasted chickpeas for extra protein.
