Ingredients
  

  • 4 cups mixed greens e.g., spinach, arugula, or romaine
  • 1 cup cherry tomatoes halved
  • 1/4 cup carrot julienned
  • 1/4 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and carrot.
  • In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper.
  • Pour the dressing over the salad and toss everything gently to combine.
  • Sprinkle the crumbled feta cheese on top and serve immediately, or refrigerate for 30 minutes to chill before serving.

Notes

This salad can be made ahead and stored in the fridge for up to 2 days. Add grilled chicken or chickpeas for added protein!
