Ingredients
  

Salad Base

  • 4 cups fresh spinach leaves washed and dried
  • 1 cup cherry tomatoes halved
  • 1/3 cup feta cheese crumbled
  • 1/4 cup almonds toasted or raw

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp black pepper
  • 1/4 tsp salt or to taste

Instructions
 

  • Wash and dry the spinach leaves thoroughly. Place them in a large mixing bowl.
  • Halve the cherry tomatoes and add them to the bowl along with feta cheese and almonds.
  • In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper to form the dressing.
  • Pour the dressing over the salad and toss gently until the spinach leaves are well coated.
  • Serve immediately and enjoy fresh!

Notes

For variation, add sliced red onions, cucumbers, or substitute almonds with walnuts or pecans.
