Instructions
Wash and dry the spinach leaves thoroughly. Place them in a large mixing bowl.
Halve the cherry tomatoes and add them to the bowl along with feta cheese and almonds.
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper to form the dressing.
Pour the dressing over the salad and toss gently until the spinach leaves are well coated.
Serve immediately and enjoy fresh!
Notes
For variation, add sliced red onions, cucumbers, or substitute almonds with walnuts or pecans.
