Ingredients
  

Soup Base

  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 carrots sliced
  • 3 celery stalks sliced

Proteins & Seasonings

  • 2 cups cooked chicken shredded
  • 8 cups gluten-free chicken broth
  • 1 tsp dried thyme
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Vegetables & Finishing

  • 2 cups baby spinach
  • 1 lemon juiced

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, carrots, and celery; sauté until softened.
  • Pour in chicken broth and bring to a gentle boil.
  • Add shredded chicken, thyme, salt, and pepper; stir well.
  • Simmer for 15–20 minutes until vegetables are tender.
  • Stir in spinach and cook until wilted, then finish with fresh lemon juice.

Notes

Add cooked rice or gluten-free noodles for a heartier version.
