Ingredients
  

Vegetables

  • 2 tomatoes diced
  • 1 cup Kalamata olives
  • 1 cup feta cheese cubed

Dressing

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • In a large bowl, combine the diced tomatoes, sliced cucumber, Kalamata olives, and cubed feta cheese.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate for 10 minutes before serving for enhanced flavor.

Notes

For added flavor, you can also add red onions or a handful of fresh herbs like basil or parsley.
