Instructions
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened.
Add garlic and cook briefly until fragrant.
Pour in chicken broth and bring to a gentle simmer.
Add shredded chicken, salt, and pepper. Simmer for 25–30 minutes.
Stir in fresh parsley, adjust seasoning, and serve warm.
