Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 200 g chicken breast cooked and shredded
  • 1 liter chicken broth low sodium
  • 1 tsp salt to taste
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened.
  • Add garlic and cook briefly until fragrant.
  • Pour in chicken broth and bring to a gentle simmer.
  • Add shredded chicken, salt, and pepper. Simmer for 25–30 minutes.
  • Stir in fresh parsley, adjust seasoning, and serve warm.

Notes

This soup stores well in the refrigerator for up to 3 days.
