  • 1 large sweet potato cubed
  • 1 chicken breast sliced
  • 1 tbsp olive oil
  • 1/2 cup Greek yogurt plain
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 200°C (400°F) and line a baking sheet.
  • Toss sweet potatoes with olive oil, salt, and paprika. Roast for 25 minutes.
  • Cook chicken in a skillet until golden and fully cooked.
  • Warm Greek yogurt gently and season lightly.
  • Assemble bowls with sweet potatoes, chicken, and yogurt sauce.

Notes
