  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 potatoes peeled and diced
  • 1 carrot chopped
  • 4 cups low-sodium vegetable broth
  • 1/2 cup unsweetened milk or plant-based milk
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until soft.
  • Add garlic and cook briefly until fragrant.
  • Add potatoes, carrot, and vegetable broth. Bring to a boil, then simmer until vegetables are tender.
  • Blend until smooth, stir in milk, season with salt and pepper, and heat gently.
