Ingredients
  

  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes halved
  • 1 medium Cucumber sliced
  • 1 medium Carrot shredded
  • 1/2 cup Cooked quinoa
  • 1/2 cup Chickpeas cooked or canned, drained and rinsed
  • 1 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tbsp Apple cider vinegar
  • 1 tsp Honey
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Prepare all your ingredients by chopping the vegetables and cooking the quinoa (if not already done). Use a clean mason jar or glass jar for packing.
  • Start by adding the dressing to the bottom of the jar. Whisk together olive oil, lemon juice, apple cider vinegar, honey, salt, and black pepper.
  • Layer the ingredients starting with the heaviest ones at the bottom: quinoa, chickpeas, shredded carrots, cucumber slices, and cherry tomatoes.
  • Top the jar with the mixed greens, pushing them down gently to compact the salad. Seal the jar tightly with the lid and refrigerate.
  • When you're ready to eat, shake the jar to distribute the dressing and enjoy your healthy salad on the go!

Notes

This salad in a jar is easily customizable! You can add proteins like grilled chicken, tofu, or nuts, and swap the quinoa with farro or brown rice for variety.
