Instructions
Prepare all your ingredients by chopping the vegetables and cooking the quinoa (if not already done). Use a clean mason jar or glass jar for packing.
Start by adding the dressing to the bottom of the jar. Whisk together olive oil, lemon juice, apple cider vinegar, honey, salt, and black pepper.
Layer the ingredients starting with the heaviest ones at the bottom: quinoa, chickpeas, shredded carrots, cucumber slices, and cherry tomatoes.
Top the jar with the mixed greens, pushing them down gently to compact the salad. Seal the jar tightly with the lid and refrigerate.
When you're ready to eat, shake the jar to distribute the dressing and enjoy your healthy salad on the go!
Notes
This salad in a jar is easily customizable! You can add proteins like grilled chicken, tofu, or nuts, and swap the quinoa with farro or brown rice for variety.
