  • 1 cup quinoa cooked
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion
  • 1/4 cup cucumber
  • 1/4 cup red bell pepper
  • 1/4 cup feta cheese
  • 1/4 cup chickpeas
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp balsamic vinegar
  • to taste salt
  • to taste pepper

Instructions
 

  • In a large bowl, combine quinoa, mixed greens, tomatoes, onion, cucumber, bell pepper, feta cheese, and chickpeas.
  • In a small bowl, whisk together olive oil, lemon juice, balsamic vinegar, salt, and pepper.
  • Drizzle the dressing over the salad and toss to combine.
