Ingredients
  

Vegetables

  • 2 cups carrots diced
  • 1 cup celery diced
  • 2 cups potatoes diced
  • 1 cup peas frozen or fresh

Broth and Spices

  • 4 cups vegetable broth
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • In a large pot, add the vegetable broth, diced carrots, celery, potatoes, and peas. Stir to combine.
  • Bring the soup to a boil over medium heat, then reduce to a simmer. Cook for about 30 minutes, or until the vegetables are tender.
  • Add the garlic powder, thyme, oregano, salt, and pepper. Stir well and continue to simmer for an additional 10-15 minutes.
  • Once the soup is ready, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley or a dollop of sour cream if desired.

Notes

This hearty vegetable soup is perfect for cold days. You can also make this ahead of time and store it in the fridge for up to 4 days or freeze it for later use.
