Ingredients
  

  • 2 cups vegetable broth
  • 1 cup carrot diced
  • 1 cup celery diced
  • 1 cup potato diced
  • 1 cup parsnip diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme

Instructions
 

  • In a large pot, combine vegetable broth, carrots, celery, and potatoes. Bring to a boil over medium-high heat.
  • Reduce heat to medium and simmer for 15-20 minutes until vegetables are tender.
  • Add the parsnips, salt, pepper, and thyme, then continue simmering for another 10-15 minutes.
  • Once the vegetables are soft and the flavors meld, remove from heat and serve hot.

Notes

This soup can be stored in the fridge for up to 3 days or frozen for future meals.
