- 6 large potatoes Yukon Gold or Red Potatoes
- 1 cup Hellmann’s mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white vinegar
- 2 boiled eggs chopped
- 1/2 cup celery diced
- Salt and pepper to taste
1. Peel and dice the potatoes into bite-sized cubes. Boil them in salted water for 10-12 minutes until fork-tender. Drain and set aside to cool.
