Ingredients
  

  • 1 tbsp olive oil
  • 400 g chicken breast cubed
  • 1 cup dry lentils rinsed
  • 2 carrots diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 6 cups chicken broth low sodium
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken cubes and cook until lightly browned.
  • Add onion, carrots, and garlic, cooking until fragrant.
  • Stir in lentils and pour in chicken broth.
  • Simmer for 30 minutes until lentils are tender. Season and serve.
