Ingredients
  

Soup Base

  • 1 whole chicken 3–4 pounds
  • 10 cups water
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 onion halved
  • 3 cloves garlic crushed
  • 1 tsp salt to taste
  • 1 tsp black peppercorns

Instructions
 

  • Place the whole chicken in a large stock pot and cover with water.
  • Add carrots, celery, onion, garlic, salt, and peppercorns.
  • Bring to a gentle boil, then reduce heat to a low simmer.
  • Simmer uncovered for about 2 hours, skimming foam occasionally.
  • Remove chicken, strain the broth, and shred meat if desired.
  • Return broth and chicken meat to the pot, adjust seasoning, and serve.

Notes

This soup can be served plain or enhanced with noodles, rice, or vegetables.
