Instructions
Place the whole chicken in a large stock pot and cover with water.
Add carrots, celery, onion, garlic, salt, and peppercorns.
Bring to a gentle boil, then reduce heat to a low simmer.
Simmer uncovered for about 2 hours, skimming foam occasionally.
Remove chicken, strain the broth, and shred meat if desired.
Return broth and chicken meat to the pot, adjust seasoning, and serve.
Notes
This soup can be served plain or enhanced with noodles, rice, or vegetables.
