Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 4 cups vegetable broth
  • 1 cup spinach
  • 1/2 tsp turmeric
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and carrots and cook until softened.
  • Stir in garlic, ginger, and turmeric, cooking briefly until fragrant.
  • Pour in vegetable broth and simmer for 20 minutes.
  • Add spinach, season with salt and pepper, simmer 5 more minutes, then serve.

Notes

You can add lemon juice or chili flakes before serving for extra flavor.
