Ingredients
  

  • 4 medium Potatoes peeled and diced
  • 1 small Onion diced
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese shredded
  • 4 slices Bacon crispy, crumbled
  • 1 tsp Salt
  • 1 tsp Black pepper freshly ground

Instructions
 

  • Turn on the Instant Pot and set it to the 'Sauté' function. Add the diced onions and garlic, and cook until fragrant (about 2 minutes).
  • Add the diced potatoes, vegetable broth, salt, and pepper. Stir to combine.
  • Seal the Instant Pot lid and set it to 'Manual' on high pressure for 8 minutes.
  • Once the cooking time is complete, carefully release the pressure. Open the lid and mash some of the potatoes with a potato masher for a creamy texture.
  • Stir in the heavy cream and shredded cheddar cheese. Cook on 'Sauté' for an additional 5 minutes, stirring occasionally until the cheese is melted.
  • Serve the soup topped with crumbled bacon and extra cheddar cheese.
