Ingredients
  

Meatballs

  • 1/2 lb ground chicken or turkey
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp Italian seasoning
  • 1/2 tsp salt

Soup Base

  • 6 cups chicken broth
  • 1 cup small pasta (acini di pepe, shells, etc.)
  • 1 cup spinach fresh
  • 1 cup white beans optional
  • 1/2 cup diced tomatoes optional

Instructions
 

  • Mix ground meat, breadcrumbs, egg, seasoning, and salt in a bowl. Form small meatballs.
  • In a large pot, bring chicken broth to a gentle boil.
  • Add the meatballs and cook for 5–7 minutes until they float.
  • Stir in pasta and cook until tender.
  • Add spinach, beans, and tomatoes; simmer briefly.
  • Season with salt and pepper to taste. Serve warm.

Notes

For an even easier version, use frozen mini meatballs and skip the mixing step!
