Ingredients
  

Soup Base

  • 1 lb ground turkey or beef
  • 6 cups chicken broth
  • 2 cups cauliflower florets
  • 1 cup spinach fresh
  • 1 cup chopped carrots optional
  • 1 cup celery
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Brown the ground turkey or beef in a pot until fully cooked.
  • Add broth and bring to a gentle simmer.
  • Stir in cauliflower, celery, and carrots (if using).
  • Add garlic powder, seasoning, salt, and pepper.
  • Simmer until vegetables are tender.
  • Stir in spinach just before serving.

Notes

For more creaminess, add 2 tablespoons of heavy cream or cream cheese at the end.
