Ingredients
  

  • 1 lb grilled chicken breast cubed1 cup whole wheat pasta, cooked4 cups Romaine lettuce, chopped1/2 cup grated Parmesan cheese1/2 cup Greek yogurt2 tbsp lemon juice1/2 tsp garlic powder1 tbsp olive oilSalt and pepper to tasteHomemade croutons (optional, for added crunch)

Instructions
 

  • Grill the chicken breasts and cut them into cubes.
  • Cook the whole wheat pasta according to package instructions.
  • In a bowl, mix Greek yogurt, lemon juice, garlic powder, olive oil, salt, and pepper to create the dressing.
  • In a large salad bowl, toss the grilled chicken, cooked pasta, and chopped Romaine lettuce.
  • Add the dressing and toss to coat evenly.
  • Sprinkle with grated Parmesan and add croutons if desired.
  • Serve immediately or store in the fridge for up to 3 days.

Notes

For a gluten-free version, substitute the pasta with a gluten-free variety.
For added flavor, sprinkle with a bit of freshly cracked black pepper or red pepper flakes.
