Ingredients
  

  • 2 cups elbow macaroni cooked and drained
  • 1/2 cup mayonnaise
  • 1/4 cup mustard yellow or Dijon
  • 1/4 cup red bell pepper diced
  • 1/4 cup green onions sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup black olives sliced
  • Salt and pepper to taste

Instructions
 

  • Cook the elbow macaroni according to package instructions. Drain and set aside to cool.
  • In a large mixing bowl, combine the mayonnaise, mustard, and a pinch of salt and pepper. Stir to mix well.
  • Add the cooked macaroni to the bowl with the dressing and toss to coat evenly.
  • Add the diced red bell pepper, sliced green onions, halved cherry tomatoes, and black olives. Stir everything together to combine.
  • Season with additional salt and pepper to taste. Chill for at least 30 minutes before serving to allow the flavors to meld.
