  •
  • 2 tablespoons parmesan grated

For the rest of the sandwich:

  •
  •
  •
  • 4 lettuce leaves
  •
  • 30 g rocket/arugula
  •
  • 4 sun-dried tomatoes
  •
  • Fresh basil leaves 5 leaves
  •
  • 1 tablespoon parmesan grated
  •
  • 1 lemon wedge juiced (optional)
  •
  • 2 small baguettes

Instructions

  • Prepare the Chicken: Coat the chicken breast in all-purpose flour. Heat a frying pan over medium heat and add the olive oil. Fry the chicken breast for about 4 minutes on each side, or until golden. Remove the chicken and set aside.
  • Make the Sauce: In the same pan, add garlic, sun-dried tomatoes, smoked paprika, chili flakes, and oregano. Sauté for 1-2 minutes, then pour in the chicken stock and single cream. Stir to combine, then add the parmesan and season with salt and pepper.
  • Cook the Chicken: Place the chicken breasts back in the pan, cover with a lid, and let it cook for another 5 minutes. Remove the chicken again once done. If the sauce is too runny, let it simmer uncovered for an extra 5 minutes to thicken.
  • Assemble the Sandwich: Layer the lettuce and arugula on the bottom of the baguette. Top with the cooked chicken, sun-dried tomatoes, basil leaves, parmesan, and sauce. Squeeze a little lemon juice over the filling (optional) and close the sandwich.
  • Serve & Enjoy: Slice the baguette into portions, serve, and enjoy your irresistible Marry Me Chicken Salad Sandwich!
