Instructions
In a large pot, sauté the onions until soft and translucent.
Add the diced potatoes and vegetable broth. Bring to a boil and cook for 20 minutes, until the potatoes are tender.
Blend the soup until smooth using a blender or immersion blender, then return it to the pot.
Stir in the milk, cheddar cheese, salt, and black pepper. Simmer for an additional 5 minutes, until creamy.
