Ingredients
  

  • 4 medium potatoes peeled and diced
  • 1 medium onion diced
  • 2 cups vegetable broth
  • 1 cup milk or dairy-free milk
  • 1 cup cheddar cheese shredded
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • In a large pot, sauté the onions until soft and translucent.
  • Add the diced potatoes and vegetable broth. Bring to a boil and cook for 20 minutes, until the potatoes are tender.
  • Blend the soup until smooth using a blender or immersion blender, then return it to the pot.
  • Stir in the milk, cheddar cheese, salt, and black pepper. Simmer for an additional 5 minutes, until creamy.
  • Serve hot, and enjoy this comforting meal!

Notes

For an extra creamy texture, add a bit of sour cream or Greek yogurt to your bowl when serving!
