Ingredients
  

Vegetables

  • 2 cups carrots diced
  • 1 cup celery diced
  • 1 cup onions diced
  • 2 cloves garlic minced

Broth and Legumes

  • 4 cups vegetable broth
  • 1 cup lentils rinsed
  • 1 cup canned tomatoes diced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp black pepper

Instructions
 

  • In a large pot, sauté onions, carrots, celery, and garlic over medium heat until softened, about 5-7 minutes.
  • Add the vegetable broth, lentils, diced tomatoes, thyme, oregano, and black pepper to the pot. Stir to combine.
  • Bring the soup to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
  • Once the lentils are cooked, taste the soup and adjust seasoning if needed. Allow the soup to cool slightly before dividing into meal prep containers.
