Ingredients
  

Salad Base

  • 2 cups cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 red onion thinly sliced
  • 1 cup kalamata olives pitted
  • 1 cup feta cheese crumbled

Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Prepare the vegetables: halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion.
  • Place all vegetables, olives, and feta into a large mixing bowl.
  • Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  • Pour the dressing over the salad and toss gently with tongs.
  • Serve immediately or refrigerate for up to 1 hour before serving.

Notes

For extra flavor, add fresh parsley or mint leaves. This salad pairs beautifully with grilled meats or crusty bread.
