Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrot, and garlic. Cook until softened.
Add zucchini, chickpeas, tomatoes, and vegetable broth.
Bring to a simmer and cook for 25–30 minutes.
Season to taste and serve hot.
Notes
Finish with fresh herbs or a drizzle of olive oil before serving.
