Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 carrot sliced
  • 1 zucchini chopped
  • 1 can chickpeas drained and rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • salt, pepper, and dried herbs oregano or thyme, to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrot, and garlic. Cook until softened.
  • Add zucchini, chickpeas, tomatoes, and vegetable broth.
  • Bring to a simmer and cook for 25–30 minutes.
  • Season to taste and serve hot.

Notes

Finish with fresh herbs or a drizzle of olive oil before serving.
