Soup Base

  • 3 tbsp butter
  • 1 onion finely chopped
  • 5 potatoes peeled and diced
  • 3 cups water
  • 1 cup milk whole milk preferred
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • Melt butter in a large pot over medium heat.
  • Add onion and cook until soft but not browned.
  • Add potatoes, water, salt, and pepper.
  • Simmer gently for 25–30 minutes until potatoes break apart.
  • Stir in milk and mash slightly for a thick texture.

Notes

This soup thickens naturally as it cools—no flour needed.
