Ingredients
  

Soup Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 5 potatoes peeled and diced
  • 4 cups vegetable broth
  • 3/4 cup milk or cream
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot. Add onion and cook until soft.
  • Add garlic and cook briefly until fragrant.
  • Add potatoes and vegetable broth. Bring to a boil, then simmer until tender.
  • Blend partially or fully, stir in milk, season, and heat through.

Notes

Blend only part of the soup if you prefer a chunky texture.
