Ingredients
  

Stew Base

  • 2 chicken thighs boneless, chopped
  • 1 can white beans drained and rinsed
  • 2 carrots sliced
  • 1 onion chopped
  • 3 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried rosemary

Instructions
 

  • Add all ingredients to a large pot and stir gently.
  • Bring to a light boil, then reduce heat.
  • Simmer uncovered for 40 minutes until thick and tender.
  • Taste and adjust seasoning before serving hot.

Notes

This stew thickens naturally as it cools and tastes even better the next day.
