Ingredients
  

  • 4 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese shredded
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Pinch of nutmeg optional

Instructions
 

  • 1. In a large pot, melt butter over medium heat. Add flour to make a roux and cook for 2 minutes.
  • 2. Slowly whisk in chicken broth and heavy cream. Bring the mixture to a simmer and cook for 5 minutes.
  • 3. Add broccoli florets, garlic powder, salt, pepper, and nutmeg (if using). Simmer for 15-20 minutes, or until broccoli is tender.
  • 4. Stir in shredded cheddar cheese until it melts into the soup.
  • 5. Use an immersion blender to blend part of the soup for a creamy consistency. Leave some broccoli chunks for texture.
  • 6. Taste and adjust seasoning as necessary.
  • 7. Serve hot with bread or in a bread bowl for an authentic Panera experience.

Notes

For a lighter version, swap heavy cream for half-and-half or a milk alternative. You can also add cooked chicken for extra protein, or top with crispy bacon for a flavorful crunch.
