Instructions
Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, red onion, olives, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
Pour the dressing over the pasta mixture and toss gently to combine until evenly coated.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to marinate.
Before serving, give the salad a quick toss and enjoy!
Notes
Feel free to add grilled chicken or chickpeas for extra protein or swap out the veggies for whatever you have on hand!
