Ingredients
  

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion diced
  • 1/4 cup olives sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground

Instructions
 

  • Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  • In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  • Pour the dressing over the pasta mixture and toss gently to combine until evenly coated.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to marinate.
  • Before serving, give the salad a quick toss and enjoy!

Notes

Feel free to add grilled chicken or chickpeas for extra protein or swap out the veggies for whatever you have on hand!
