Instructions
Heat olive oil in a pot and sauté onion and garlic until fragrant.
Add carrots, tomatoes, and broth. Bring to a boil.
Reduce heat and simmer for 10 minutes until vegetables soften.
Stir in spinach, season with salt and pepper, and cook for 1 minute.
Serve warm and enjoy.
Notes
Add noodles, beans, or leftover chicken to make it heartier.
