Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves minced

Vegetables

  • 1 cup carrots sliced
  • 1 cup tomatoes chopped
  • 2 cups vegetable broth

Finish

  • 1/2 cup fresh spinach
  • to taste salt & pepper

Instructions
 

  • Heat olive oil in a pot and sauté onion and garlic until fragrant.
  • Add carrots, tomatoes, and broth. Bring to a boil.
  • Reduce heat and simmer for 10 minutes until vegetables soften.
  • Stir in spinach, season with salt and pepper, and cook for 1 minute.
  • Serve warm and enjoy.

Notes

Add noodles, beans, or leftover chicken to make it heartier.
