Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 2 cups cooked chicken shredded
  • 5 cups chicken broth low sodium
  • 1 cup frozen peas
  • 1/2 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook for 5 minutes.
  • Add chicken and broth, then bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Stir in peas, salt, and pepper. Serve warm.
